Im thinking of setting up a RAID Setup is there any advantage and any difference in speed?

Yes there is, I'd recommend looking through the "Post your benchmark" thread to see the differences, and look through the sticky/google about raid levels

So how do i set this up, im just about to go and buy 2 hard drives, do plug to of them into motherboard then install windows?

Assuming your motherboard has RAID, you will need to configure it correctly. They will need to plug into the correct ports, and you will need the RAID drivers on a floppy / USB pen drive for windows. (I think you press f6 when the windows install asks you to).
