My nan (bless her RIP) lived on a canal boat. When I look back and speak with family i am always amazed by her lack of waste, she would cook anything out of any waste.

One of her best things for knocking up was exactly this, potato skin chips. Any friends I took onboard while growing up would shudder at the thought until they tried one. This thread reminds me of her.

Recently I took the mrs for a bit at my local and on the menu I thought was chips. Turns out was exactly potato skin chips, they were nice with some salt and pepper and a bit of vinegar, only nice if crispy though

Sweet mother of god... So my chips came out perfect, nice and shoft, crunchy and crispy on the outside.

After bringing them to the boil in salty water, I coated them in oil and slowly worked in paprika and cayenne (figured they would go together) and wow... The pepper is LOVELY!!!!!

The smell from the oven was so intense.

Good call. The lady loved them!
