I’m very interested in getting an e-ink tablet for note taking, reading and other similar activities.

The brand leader seems to be ReMarkable but there seem to be alll sorts of different brands such as Penstar, Boox, VIwoods, as well as the Kindle Scribe. Problem is that there are no stores to actually try any of these out.

Anyone used any of these or have any recommendations?

Really depends what you want to do; if its mainly notetaking then the Remarkable is probably the best for that; however for reading the Kindle Scribe can be hard to beat due to the Amazon ecosystem but it is a more limited note-taking device.
If you want basically an Android Tablet but eINk then the Boox stuff is pretty good; will run most things and are far less limiting than either the Kindle or Remarkable devices.

I've had a few Boox Devices (and I'm actually considering another just now) - I have had issue with dead pixels on their devices and their own support leaves something to be desired, that said in the UK you can just buy them direct from Amazon so its their support if theres an issue later.

I really, really like the New Kindle Scribe (2025) - its night and day faster than the older models, the 11" screen is great for reading and note-taking and the new integration with Google Drive, OneDrive and OneNote is a much needed; I ordered the Scribe Colorsoft when it launched and really like it but I'm not sure I really need colour so it went back; I'm currently deciding whether just to order the B&W Scribe 2025 or picked a Boox Note Air 5C.

I have the Kobo Sage, I rarely take notes on it but when I have it works well. The ecosystem doesn't seem to be locked in and it just "works"
