All I have is XP in my boot.ini, nothing other than the default settings and yet Windows 7 is still coming up as an option when I boot up. Any ideas?

As bledd said, the tool above will fix it (and used to be free). A quick solution would be to boot off the XP disc and run fixboot and fixmbr to forcibly reinstall the XP bootloader.
