Roasted Vegetables, healthy?

Have to put my hand up and say that I find it hard eating raw or boiled vegetables, except for green beans. Something about the flavour of pretty much all boiled or raw veg that I just don't like.

Eaten at a few places recently that roasted the vegetables and have to say I enjoyed them all (Red/Yellow peppers, courgettes, carrots, green beans)

Is there any downside to eaten veg this way? Would I be nuking the nutrients or removing the health aspect by drizzling them with a little olive oil?
 
Perfectly ok way of cooking them IMO, olive oil is a good/healthy oil, not as robust under high heat as coconut oil/lard though but still ok.
 
Perfectly fine. Some argue that you're likely to keep more nutrients than boiling them to death.

IMO roasted veg are delicious - if it were as quick as steaming/boiling them I'd have it every day for dinner!
 
Roasted peppers and mushrooms = heavenly ... especially grilled with a slice of tigerloaf and some stilton !

Also perfectly normal and healthy .. vitamins do not get lost whats so ever ... its better then boiling them
 
If you want to try and like boiled veg, try the following:

Don't cook for too long.
Once done, drain and blast with cold water to refresh.
Melt a bit of butter/marg in to the pan, then add the veg and stir until heated through.

Yum!
 
Bit of a staple in our house during the winter months. Excellent with a couple of chops thrown in halfway through.

Al dente steamed is what I usually cook at home, but there's nothing wrong with roasted at all. The flavors are really nice.
 
My wife and I are on weight watchers and we still have roasted veg, she has a little oil sprayer that very lightly coats the veg and they turn out great

also WillyNelson that looks great and very similar to somthing i do but with chicken thighs
 
Aside from the pork chops, the only fat in there is a small bit of olive oil. Everything else is pure vegetable goodness :D

And roasted beetroot tastes epic!
 
I expect them to be healthy, though something that tastes so good probably shouldn't be...(well mushrooms roasted with some bread crumbs and cheese probably isn't the healthiest but tastes amazing)
