Roasting tin pan for one pan meals and tray bakes

Looking to simplify meals going forward by getting a few books from https://www.rukmini-iyer.com/ and going down the one pan route for lunch meals preps and some dinners to explore more meal options.

The meals are all about cooking in one pan in the oven.

Anyone do something similar and recommend some decent roasting pans? Steel? Enamel? Aluminium?

My pans are currently just cheap ones form Robert Dyas or Pyrex glass and it not that good as most things stick or don't heat evenly.

I could air fry but want to make bulk meals.

My local cook shop had a cast iron enamelled roaster for about £30. Apart from the name it could be an expensive French brand. Brilliant, far better than any thin roaster, I strongly recommend cast iron or heavy gauge steel.
