I said breakdown of activities, not necessarily a breakdown of costs.

Fair enough, most people don't have that view & want a comprehensive breakdown including costs. They will often balk at the cost but forget a lot of smaller builders will be the roofer, the QS, the site manager as well as the person doing the work.

A smaller firm will also charge a lot less than a larger building company that employs a number of office staff but clients generally don't like the idea of a blue collar worker earning a professional salary, despite them carrying out the normally very expensive paperwork side too. Which is the easy part really, but for some reason doesn't get acknowledged as it should in this kind of occurrence.
