I have a Note ll, I am thinking of rooting it. I would like to keep most of the stock Samsung stuff. what is the best method for me to root it?
I have the sky sports app, this will only work if the phone Is not rooted. How would I return my phone to non root status? How much of a hassle would it be to switch back and forth? I will only be using as sky app a couple of times a week.

I wouldn't bother, you want the stock samsung stuff and want to use the sky app.

Any reason you want to root?

Don't bother rooting if you want to use Sky, it's very picky with rooted devices and even hiding root it still won't work. As for unrooting, it depends on how you've rooted it, but usually it's simplier compared to rooting itself.

For a Note 2 all you need to do to root is flash CF-Auto-Root, to unroot you should just be able to flash which ever stock ROM you're already on (without wiping anything). It will take about 15 seconds to flash CF-Auto-Root after the first time, and about 2 minutes to flash the stock ROM after the first tme (they're the same procedure, a stock ROM is just much bigger :p).

No idea about Sky Go/Sky Sports TV apps though.

There are other ways to unroot, but flashing a stock ROM over it is probably the most likely to work with Sky :).

In my Xperia PLAY's case, since I used the zerg rush program to root mine, all I have to do is hook my phone to my PC and press "unroot", and all is done in a single press of a button. But as I said, it depends on the rooting method, if the rooting method you used involved flashing a rooted firmwire instead, then you will need to flash a stock firmwire. Sometimes you may need to wipe your data if it doesn't work properly.
