Safe knife sharpener?

If you don't feel safe using the sharpener in the op then you're either completely cack handed or using it wrong. The blade goes through the middle and points away from the handle, are you holding it and running the blade down the outside pointing towards the handle? I've just looked at mine and there's a picture on it showing how it should be used.

Nope, I was doing it right, I just don't like holding sharpeners in case the knife slips. With the anysharp device, my left hand isn't needed as the device has suction grip to the surface.


Just sharpened 4 knives with the new gadget and have to say, it's very good! Cheap knives, 3 of which were never sharp in the first place, are pretty damn sharp now. A tiny pile of metal shavings sat on the deck of the sharpener. Absolutely rock solid when the suction lever is pulled down.

edit : just checked reviews and it seems highly regarded.

Also picked up a couple of chopping boards as the solid granite block was destroying the knives.

What are you meant to do with a granite board anyway :confused:

Like you say it's far too hard for cutting things on.

Arent they supposed to be worktop savers rather than cutting boards? We have one either side of the cooker to put hot pans on. i wouldnt even dream of using it as a cutting board.
 
One of the reasons they tell you not to cut on directly on granite worktops is because it ruins your knives. The only reason to have a granite board is if you need to work something on a cold surface, like pastry. You might want a granite board to put in the fridge, or you might have a wooden worktop.
 
Tempering choclate can also be easier on a granite board as it can act as a nice heat sink.

On The OP's original question I board a Chef's Choice electric sharpener many years ago, nice and easy to use.
 
Just got a any sharp too like merlin. Does a nice job. Quick and effortless. Bit tricky with smaller knives i think but maybe just need more strokes.
 
I've got one of these, does the job rather well. You can really feel it cutting into the metal, as evidenced by the steel filings it leaves behind.

I picked one up a while ago, and it does do a good job superficially, but it's more like it's roughening up the edge of the blade rather than give it a true sharpen. I have read reviews that said after a few months of regular use, it will trash your knives, so it's really only something you use infrequently. A steel to straighten the burr should be used most of the time, and a light stroke or two through the Anysharp a few times a year at most. Don't scrape large chunks off your knives sawing it through the device on a regular basis.

Having said that, the Anysharp is small, and the way it sucks itself down to a solid surface does mean that your hands are nowhere near the blade edge as you sharpen. It's also useless for scissors, but for a tenner it's difficult to complain when you've got the hang of it.
 
Treated myself to one of these a while back - Can say- I can now cut thin slices off a sheet of printer paper - Very pleased with it - Was expensive but it does what every other knife sharpener I have had didn't do -which is sharpen my knives.
