Safe to mix engine coolants?

To be honest if I'm having to keep topping up the levels, I would be more worried of a leak somewhere, you shouldn't be losing coolant like that.

This is only the first time, I did check it a few months ago and it was fine (and I haven't topped it up since I bought it a year ago) but I'll be keeping an eye on it more closely now.
 
Just top it up and get it done when needed. 250-500ml is not going to make much difference in an average 6-7 litre system. The expansion tank on your car is there to bleed the cooling system of air. The Max and Min line represents where you need the coolant to be to operate efficiently. Above max and you run the risk of your coolant overflowing when it heats up. Too low and it will not bleed air correctly as it is no longer the highest part of the system.

Losing coolant is just that the water has boiled and evapourated out of the expansion tank.
