Does anyone have good suggestions on what to have with Salmon? Currently I've been cooking up some new potatoes and carrots with some light mayo, but it's getting bland and I'm finding myself still hungry afterwards.

Foil wrap with some butter and rosemary then baked for 15 to 20 minutes.

Salmon has enough of its own flavour that you generally don't need to do much to it.

Salmon en croute.
Roast it in parchment paper with sesame oil and some thinly sliced veh (fennel works well) and serve with noodles.
Pan fry with a simple parsley white sauce.
Bake and then flake through pasta with dill.

You can get some great results by soaking a plank of wood (cedar, oak, apple) in water for a few hours, then put it on a BBQ with the lid on. 8 - 10 mins should be long enough.

Spread a bit of pesto on it. Bake it on A layer of green beans, in a foil parcel. Or just lemon juice and olive oil instead of pesto. So easy

I love pesto on salmon, but always grate a load of cheese on top before baking for 20 mins, and don't wrap it, then you get a nice crusty cheesy top :)
