I plan on doing some basic vids like this for my blog, and just thought I would post a sample that you can compare in terms of quality. I'm particularly happy with the sound, especially as the mic wasn't very close.

No post processing was done whatsoever, the below vid is SOOC.

Equipement used:
D800E in DX mode
85 1.4 @ 1.4
Camranger + Ipad
Macbook + Garageband

 
Looks pretty good - I'd be careful with shooting wide open (which I assume that is), in 1080p your ears are clearly out of focus. I'd stop it down just a little, not too much as the bokeh is nice :)

Also on the latency issues I'd be interested to see a 'clap test' (ie you clapping!) as it seems to be a little out of sync, that said if it is a defined amount the whole time it'll be easy to fix in post - rather than dragging audio around and hoping! Using Garageband to whack the audio through could actually give you some other options in that you could apply some light processing such as just a light compression to bring the audio level up if you wanna start getting complicated!

Yeh it was shot wide open, but my vids will only be standard res as they need to fit in a narrowish blog (hopefully spot's won't be so visible Lol).

I realised I had left auto tuning on, which creates some latency. Disable that and there is no latency to the best of my knowledge, I'll do a clap test tomorrow.
Garageband seems pretty cool, but I'm a newb and have barely scratched the surface.
 
Looks and sounds excellent.

I agree with the above that it would probably benefit from a slight aperture adjustment (f2 maybe) but there's nothing other than that really.

Looking forward to seeing some results.

Yeah - GB is pretty amazing for something bundled with the OS (when you compare it to 'Sound Recorder' on XP, LOL). I've been using Logic 9 for the first time as the guys who I'm working with don't use ProTools recently and I'm amazed by the interoperability and how much you can actually do in GB! I did notice however trying to track in it - any plugins seem to add some latency and it isn't very controllable, seems to automatically add buffering rather than you being able to choose what sort of buffer to use.

BTW - Just took a look at your Flickr and you've shot some really great images :)

I was just going to use natural light, but I noticed that the light at the start of the video looks dull and by the end the sun came out a little and looks much nicer/warmer.

So just ordered one of these to go in the below softbox.

Very good clarity & great clear sound!

I'm going to taking up video too as my daughter's doing dancing and will be filming a few in the near future!

I was going to use Sony Vegas 12 if it's any good.

can you get wireless mics for dslr's?

Yeh I hear Vegas is very good.
You can get wireless mics, but the good ones are very expensive.
If you want a portable mic, the zoom h1 or h2 ones are supposed to be very good. You will have to sync the audio and video in post though unless you find a way to plug the mic into the d800, but then you will have a wire. The chances are you will have to do some noise reduction anyway, so it will likely be just as easy to sync in post.
