I believe the 320Gb, 640gb and 1tb disks are the fastest due to having 1 333gb platter rather than multiple different ones, Id wait for someone else to confirm though.

Absolutely correct - the 750Gb is slightly slower than the 3 above. Raid is very simple to set up as long as you have a reasonably new mobo. The arguments over whether it's worth it have raged for the life of the forum and those on each side refuse to budge!
Best bet is probably just to buy the 1Tb one and keep adding more as your needs grow. Simplest solution by far.
It does depend on your needs though. But the average home user will not benefit from raid (from a speed point of view) - Raid0/5/10 is a different matter
Using one for storage, but just because I'm too lazy to reinstall, I should be using it for the OS as well. But I'll probably get another one when this one gets closer to full, and put the system on it. There's not a lot on the market that is faster, apart from SSD's and Velociraptors and comparatively, the Samsung is incredible price / performance and price / size.
