Ivy is the better cpu so get that obviously, unless you can get a 2500k for considerably less money.

3570k gets my vote.
If the current batches of 2500k's are good clockers and you can get one with a reasonable price difference between that and a 3570k then that must be considered.
The 3570k tend to run very hot and that would tend to be the limiting factor unless you have exotic cooling and or delid the chip, and even then heat is still an issue.
If the price is too similar then possibly a 3570k, which could get to around 4.4Ghz with reasonable volts and cooling could be the better option.
Just had a little check around and there seems to be about £10 or so in - so I would then get the 3570k.

Noctua NH-D14 gets good reviews, though it is very big so you'll probably need low profile memory to fit underneath. IB only gets hot over around 4.6 GHz, below that it is fine in terms of temps. Remember that a 3570k at 4.6 GHz will be roughly the same performance as a 2500k at 4.8/4.9 GHz, at which point the 2500k would be running very hot (given that the latest batches of SB don't seem to overclock very well)
