Scrambled eggs

The only reason to use milk is if you can't cook without your scrambled egg drying out to quickly. A bit of butter at the end removes any need to add milk.

Infact I've never seen a chef's book ever add milk :confused:

Indeed. All this talk of adding milk and getting burnt egg necessitating arduous washing up suggests that people ar ecooking their eggs WAY too quickly.

You need the hob on the lowest possble setting, just warming them gently until they're nearly done. When about 90% of the egg has solidified, take it off the heat and make the toast. By the time you've done that the egg will have finished cooking on its own and will be perfect.

Use a decent saucepan and the washing up will take 15 seconds. One quick wipe and you're done.
 
I bet half the forum had scrambled eggs for lunch today. I certainly did - cooked gently in the pan (damn Microwave heathens), little bit of mature cheddar cheese melted in just before they're done. 4 eggs, slightly runny on a single piece of toast. Bliss.

Thats a point that's been overlooked. A really good pan to provide decent heat distribution and no 'hot spots' is a real advantage.

When I got my analon pans I realised the difference a good pan makes.

Think i'll give microwave scrambled eggs a go in a wee while. Just had cocopops n im still hungry. :(

Measuring jug + 100ml milk + 3 eggs + stirring it till its mixed..... then how long in the micro?
 
Give it 60 secs, then take out and stir, then another 30 secs, should be done - add another 30 secs if you like it slightly better done (less butter etc still on surface).

Not only is it tastier but its quicker!
