Hai guyz!!

Got myself some Sea Bass fillets (quite thin but they still have the skin on) and was wondering the best way to cook them?

I will be using a pan. On cooking programs i've seen them bascially cook it skin side down in a little oil for a few minutes to get it nice and crispy then turn it over once for a few more minutes just to finish it off. Nothing special, having never had sea bass before i'm hoping it will taste nice like this. I think I might just throw in some parsley as well.

What do you think?

Oh it will be served with veg and mashed potato :)
 
Turn the pan off before you turn them over. The heat from the pan will be more than enough to finish the flesh side.

To serve, on a really simple ratatouille works well.
 
really thin? just squeeze lemon, the acid will cook the fish, no cooking needed, very fresh and flavoursome.

Yah glad I picked a good fish, really looking forward to these tomorrow :D!

I'll be sure to turn the pan off then turn them over :)
 
A little butter and oil in the pan, skin side down on a really hot pan, sear until you get colour on the skin, flip and then immediately oven it for a few minutes @ 190+

Bass doesn't need a lot of work, season it well and have it with some nice steamed/boiled veg and a nice buttery sauce and you're golden, works really well with green irony veg and baby potatoes
 
It's a strange you say that, my new 'rule' to myself is to always ensure I don't overcook food. I always used to, 50% because I was stupid and 50% because I was worried about undercooked food. I pay much more attention now :)
 
If you dont have an oven then yeah, just fry it until the flesh about 1/2 to 2/3s above the skin goes opaque, whack the heat off, flip and let it finish while you sort the rest of your dinner out. You could even use the pan juices/oil/butter with a bit of cream and acid with a little bit of herbage like parsley or tarragon to moisten the whole thing up! Capers work well too!
