Sensor resolution

Any example camera's?

I think you may be thinking about it the wrong way around. Most (still) cameras have much more resolution than 1080p. However in video mode, the resolution is either down-sampled to give you 1080p, or the camera crops an area of the sensor to give you 1080p.
 
It up-scales a native 1080p resolution. It is no different than going into photoshop and re-sizing the image. Therefore you are not actually gaining anymore resolution or detail, and the picture may actually look soft at it's larger size, unfortunately that's the joys of marketing.
