I have a new server with 2 X 72Gb SAS drives in it.

The options I am given for the raid array are:

Raid 0 or RAID 1+0

As I understand 1 + 0 Creates a striped pair with the first 2 disks, then mirrors them to the second 2 disks...but there are only 2 so if I choose 1+0 then can I add 2 more disks to the array later? without having to re-build the server?

That's strange that the server is giving you the option of RAID1+0 at this stage, normally you would only get that if there were four disks available. Most decent RAID implementations will allow you to migrate between RAID levels although I'd check what is actually possible on the particular controller you have. Also bear in mind that RAID10 and RAID1+0 are different and have differing levels of fault tolerance (can't remember which is which though).
