jeez you have your solution its very simple so whats the ptoblem, its not an adnroid thing its a Samsung thing, infarct people like this should just buy an iphone and be done with it.
go pack up the S3 and retun it to he store for an iphone because it "just works"
not sure i have seen anything that has musci controlls without any music on without having a different lock screen installed,

I'm still having problems even with the players with lock screen controls. These controls don't actually appear to show on the lock screen, and I can only get them to appear by first having music playing, and secondly by tapping on the lock screen, which makes a second lock screen with the player controls appear in place of the first lock screen! Is there anyway of getting the player controls to simply appear in the middle of the normal lock screen so that when I press the home button, I can either unlock the phone as normal, control my music or use the 4 user configured shortcuts? I'm struggling to get something that "just works" like this!

this is one of the downsides to Android, you have to put in some effort to get stuff working. This is why i've always ended up going back to an iPhone, right from the time when i had a nexus one. Android is better in some areas, customisation mainly. choice of apps to do the same job. At the end of the day iOS will for pretty much everything just work. Android will require a lot more input. I've found this with the nexus7 over an iPad, the big plus for the 7 is the size it will fit in your pocket. once you have an android phone as you want it then they work well. On the plus android is certainly developing quicker in terms of features but is still lacking in the basics in some areas. I've used every iPhone and about 8 android phones. I keep switching back to android in the hope that it will have improved enough... for my needs. satnav software on android does not have music controls built in you would need to have a music app already running or paused and switch between the nav and music program using the notification bar. to skip a track on the iphone is so much easier in comparison to an android device
In which case I need something that'll allow me to subscribe to and manage podcasts too. Any ideas what app will do all of this?
