For the first time, I have a mature apple tree that seems to be about to start giving me a lot of ripe Bramley apples. I've used this crumble recipe in the past with great success and intend to do so again:

What do y'all do with your homegrown? Also, I've got what is probably a crab apple next to it, does anyone make any use of those?

P.S. Is this not a bit early for apples to be ready?
 
Will have to give that one a go. I've two eating and one cooking apple tree in my garden. The eating ones produce an unfeasible amount of apples, they usually get to about 4" diameter yet are still ultra sweet :D

I thought September was the season for them? I've loads already but they're only normal size mind, they tasted OK but a bit bitter still.
 
nice - Bramley apples best tasting cooking apple :

crumbles (as you say) 1/4 brown flour, 3/4 oats, with margarine cut in and mix in some dark brown sugar, pinch salt - make it up as you go !
apple fritters : rings/~10mm of cored apple in batter, shallow fried served w/brown sugar
baked apples : cored stuffed with dried fruit eg dates

can store Bramley's well for 5-6 months cool environment between newspaper perhaps pick a bit immature
 
stewing them other fruits is probably mostly what you will do with them.

one recipe id suggest is stewed apple and blackberry in a pancake roll up then add cream. appsolutley gorgeous :D
 
I make and sell cider. Cookers and eaters can make a Kentish Cider, ie. low in tannins, but they can be dry and sharp. You could add the crab apples to get some tannin in there and make it more West Country style.

Bramley can be picked in late September or October. Stored correctly they will last until March.

Depending on what variety the crab apple is you may be able to make jelly from it.
 
Are there any bramley based ciders on the market, to try out, and see whether cider does justice to their unique flavour ? (before committing any of your own !)
