Sharing folders with 1 PC but not another

So I'm tearing my hair out with this as I can't get the sharing working as I want it to. The setup is as follows:

Desktop running Windows 7 with all the files
My laptop running Windows 8.1, connected directly to the desktop via ethernet
Friends laptop running Windows 7 connected to the desktop via Wi-Fi

I'm sharing a couple of the drives which I'm allowing the friend to access, but I've lost access to another as there are folders on there that I don't want to share. It's not allowing me to share folders with my laptop as there's no option to do it.

Is there an easy way to share the files on the desktop with my laptop but not his?

Sure. There are a couple of ways of doing it.

Disable guest access
One way is to give him a login on your PC, but disable Interactive Login.
Create a group with you and him in it.
Create a folder for the stuff you want to share. Assign group permissions such that Administrators have Full Control and the group you just created has Change or Read-only access as appropriate.
Create a Share for that folder and apply permissions as above.
Then your friend will be able to access the data by mapping a drive, provided he puts in the credentials which you give him, though he'll connect to \\DAVE_PC\FRED as (e.g.) DAVE_PC\FRED_BLOGGS rather than go straight through.

Repeat creating the shares for the stuff you want to share for yourself. Again you connect as DAVE_PC\Your_ID

Note though that you will always be able to connect using an administrator account to the hidden shares like \\DAVE_PC\c$.

In this day and age, I wouldn't bother connecting machines up directly.

Use a router.

Then it's basic file permissions and share permissions.
