Should CPU block be fully seated?

I have taken off my CPU block, Swiftech apogee GTZ to re-apply AS5 and noticed that only the centre of the block is touching the CPU.
It seems that the core i7 920 is not perfectly flat.
Should the whole CPU be seated by the CPU block or is it okay for just the centre to be seated?

What temperatures is your CPU reaching and is that the reason for you applying some more AS5 ?.

My CPU is OC'd to 3.2 GHZ with voltage at 1.2
My temps are 38C idle and 68 LOAD on IBT.
I have just ordered 2 new 1900 RPM fans for the rad as the noctua P12's are not good enough for pulling cool air through the fins of the rad.
I understand that the weather is hot at the moment.
