Well done is a waste of good meat. I eat medium rare/rare dependant on who's cooking. I'd love to see someone cooking something blue, why even cook it?
Sear the outside as quickly as possible then eat it Tbh these days I just use the blow torch to cook the outsides of things that don't need "real" cooking. I do quite like my meat to be at least hot all the way through though (so to speak)
