Can anyone tell me definitively, does the encryption on Skype mean it can't be eves dropped at all ? for example using Skype at work and routing via the work server, does any software exist which could "record" voice or chat ?

Well according to wikipedia it uses a closed protocol, so while it may not be easy for someone to evesdrop it may well be possible.
That aside, it wouldn't be straightforward to recreate a conversation just by capturing what passes through the router. I wouldn't worry.
