Slow cooking: approved recipes?

beef, skirt, brisket or his fave is braised steak,fried onions, then add carrot, celery, bay leaf , peppercorns and half can guiness, big handful basil, 2 spoons horseradish or wasabi, salt and peppar, oxo cube, half tube tomato puree, 5-6 hours, whang herby dumplings in half hour to go . Dont use whole can guiness, too sour! any mash, he likes it when I put out colcannon, mash tatties with fine cabbage bashed in it with spring onions. Granules to thicken.

This is what I have done in my 3.5l cooker a few times, gives 4 large servings.

Getting some good ideas now and I'm going shopping later so will do my best to grab all the ingredients. A guy from work is lending me a book tomorrow so I'll try some of those and post them here when I'm done.
 
Are slow cookers economical on electricity?.

Surely having something like that running all day must use more power than oven cooking something for an hour or so.
 
Chicken Curry


a couple of potatoes diced into 2cm cubes
tin of Chopped tomatoes
3 cloves of garlic - minced
2 onions
300 ml single cream
1/2 Jar of Tikka massala paste (Pataks)
Glug of olive oil
Fresh corriander just before serving

Low 7ish hours. I personally dont like chicken in the slow cooker, lamb, beef etc are superb, but the chicken goes abit dry in mine, so i marinade the chicken overnight in spices, oven cook and stir into the curry just before serving.
 
chile con carne, lamb shanks, beef cobbler, beef stew and dumplings....awesome stuff

also slow cooked soups...longer the cooking the better the flavours, then blitz at the end.

never cooked a curry this slow though, tempted.

Ok so, after having the slow cooker a while now and cooking a few dishes I must say I quite enjoy it!

Two recipies I've used that were nice:

Beef + Ale Stew (from Jamie Oliver)

* 3 fresh or dried bay leaves
* 500g diced stewing beef
* 500ml ale, Guinness or stout
* 2 sticks of celery
* 2 medium onions
* 2 carrots
* Olive oil
* 1 heaped tbsp plain flour
* 1 x 400g tin of chopped tomatoes
* Sea salt and freshly ground black pepper

Whack it all in slow cooker, leave for 8hours job done. Perhaps add a few gravy granules near the end to thicken to taste. Remove Bay Leaves when done. I served with some creamy mash potato.

I would say that for me it was TOO much onion and not enough carrot though. I'd use 1 onion and a 3rd carrot. Tasted good.


Lamb Shank Goodness

* 4 Lamb Shanks
* 2 Parsnips
* 2 LARGE Carrots
* 2 sticks of celery
* 1 onion (diced quite fine)
* 1/4-1/2 punnet of mushrooms
* 1 tsp woochesteresrhire sauce ;)
* 1 Pint of Beef stock
* Salt and Pepper to taste
* 400g chopped tomatoes
* 3 Bay Leaves

Cut veg to liking, dice the mushroom and onion. Whack it all in. Leave for 8hrs. Gravy granules to thicken. Remove bones.

I made this dish with a mix of sweet + normal mashed potato. I also sortee'd some for a crispy effect :) It was a very awesome meal. Probably tastier than the beef above!

I would say that the slow cooking game is getting used to what you like and adding it in. You can't go too far wrong!
