Slow transfer speeds between 2 SSDs on windows 11

*** apologies if this isn't in the right place, I wasn't sure whether this went under storage or Windows ***

Does anyone else have a system with 2 or more internal SSDs in where the transfer speeds between them are slower than they should be on Windows 11?

In my system, if I try to transfer a single large file of 10gb between drives it will start at the maximum speed of the connection, but then drop down to less than 100mb a second and then bounce around, occasionally dropping to 0, but never getting back to the maximum speed.

As a test, I've just put windows 10 back on and the file transfers at the maximum speed of the drive from start to finish, so this doesn't seem to be a hardware issue and I can replicate it with a variety of files and transfers between a variety of internal drives.

I've tried disabling my AV (Eset Internet Security) and that didn't make a difference and I've checked things like chipset drivers and the like to make sure that everything is up to date on Windows 11.

Any clues as to what might be causing this?
 
Whats temperature during transfer of the drives?
Temperatures reported by hardware info and the crucial software (vendor of both ssds) are identical in both windows 10 when they are working at the right speed and in windows 11 when the speeds are all over the place.

A bit of additional reading does seem to suggest that this is a windows 11 issue as mentioned by mcnumpty2323 with it impacting on some systems, so I am going back to windows 10 for the foreseeable future
