Socket 1700 Full ATX DDR4 board recommendation please.

It's been a while since I built my last system and forgotten most but is this PSU - EVGA Supernova 1200 P2 80+ Platinum enough for these boards?

The Z690 has 2 x 8 pin power sockets, the B660 has an 8 + 4 pin power socket while my current one only has a single 8 pin socket.

So a 12700F, either of these MSI boards and a 2080 super card, is this PSU enough?

You'd be OK with a decent 850W, but it's never a bad idea IMO to get a larger than required PSU.

I'm running a 12700K (OC'd to 5.1/4) with the Z690-A, a 3080 Ti FE, 360 AIO, 8 RGB fans, 4xRGB DDR4 memory, 2x18TB HDD, 1x2TB SSD, 1x2TB NVME with a Phanteks 1000W PSU and it doesn't break a sweat.

I've already got the EVGA Supernova 1200 P2 80+ Platinum but it's been so long since I built my last PC that I wasn't sure if a 6+ year old PSU had all the modular sockets for 2 8 pin power connectors. I'm sure it does, I just can't remember and haven't looked at it for a while and I have no idea where the modular cables are anymore to add an extra 8 pin but I'm sure I can buy a single cable if not.

you don't need 2x 8-pin eps for the 12700f
connecting one is sufficient and will not hamper the cpu nor cause any danger to the system

I'm going to assume then that it's also not going to hurt if I do use 2 x 8 pin?

I'll stick with 1 like you said but I don't want to blow the chip up if I do add a second 8 pin.
 
CPU without EPs connector = 75w
CPU + 4 pin = 75 + 80w (155w)
Cpu + 8 pin = 75 + 160w (235 w)
CPU + 4pin + 8pin = 315w
CPU + 2x 8pin = 395w
 
Right so as the 12700F base power is 65W and Turbo is 180W a single 8 pin at 235W is more than enough?

I'm rubbish at all this but am I understanding this correctly?
