I'm on windows 7 pro. Ive got 2x1tb drives. One drive is partitioned with a windows and storage partition. I want to use the second drive to mirror the first. Can this be setup with software raid 1 under win 7? I don't want to loose any data. My mobo prob has onboard raid but I'm not sure I want to risk loosing all!

In sort, software raid in Windows = crap.
The best way would be to either backup to the second drive regularly or image your OS drive to an external drive set the 2x1tb drives as RAID1 on your motherboard and then image back your OS to the new RAID1 volume.
