Spec me a great viggie breakfast

Hi all,
In the tradition of OCUK I need speccing a great cooked breakfast but it needs to be veggie.
On Saturday my gf is moving into my house and I want to cook something mega for our first breakfast.

So far I was thinking of a standard English breakfast but with viggie sausages or maybe fruity pancakes?

I'm not a bad cook so should be able to manage most things.

Any other ideas people might have tried?
 
Baking Potato peeled and grated into a drying up towel or muslin if you have any, wring out as much as you can, you'll be surprised the amount, most of my kitchen towels are now in tatters as I squeeze them so much they burst, in a mixing bowl salt and pepper and into a frying pan with a frying oil not olive oil as they go greasy, arrange in shapes flip cook and serve

Trust me you'll never buy a Mcain Hash Brown again

Hash Brown / Rosti whatever
 
Grapefruit + Strawberries

Croissant
Pain au chocolat
Pain aux raisins
Brioche
+
Butter
Jam

Coffee/Hot Chocolate/Tea

Scrambled Eggs
Sautéed mushrooms
Fried tomatoes
Toast

Pain Perdu (French Toast)
+ eggs or syrup/fruit

Full veggie English at Kastel 69 includes:

Fried eggs, Quorn sausages, toast, beans, hashbrown (home made or packet), grilled tomato. Optional: bubble and squeak (make sure you use the veggie Lea and Perrins), mushrooms, fried bread.

Of course, if you've got two frying pans and you're not veggie, just do the veggie in one pan and the meatie in the other :)
