Greece, Greek islands, Cyprus, Portugal, Spain, Croatia, Italy. Sun, sea and nice food! I went to Rhodes last year and it was fantastic and great value.
 
I know you said no to the ME. But maybe Oman? My partners dad recently went and loved it. Not sure if it fits into your budget though.

Haven't done much proper research into these but the top few from a search on TUI.

Always rated TUI, their flights are good enough for the price (as long as you aren't expecting Emirates first class of course), the hotels have always been alright and never had a bad one on the 4/5 that i've been on.

Just searched for 1 week in middle of June, set the max price, set rating to 4T and above and had a search :)
 
Mallorca has some nice parts, Puerto Pollenca for example is very chilled. Otherwise as others have said anywhere else on the Mediterranean will be your best shout.
 
Give Montenegro a gander - an often overlooked one though Kotor is somewhat popular but some truly spectacular scenery, generally reasonably safe and usually friendly people.

He can choose where to go / where not to go. It's called preference.

OP lost his dad 2 years ago, he hasn't "just" lost him (OP this is sad and doesn't change the fact you lost your Dad, sorry to hear that you did). Not entirely sure what your point with that part of the comment was either.

OP is asking for options, clearly he cant choose where to go.....

Nothing wrong with asking for a reason these countries are excluded as there are numerous similar styles of holiday experience's in other countries, e.g. Morocco is very similar from a holiday experience to turkey, but has a lot of different cultural/natural/historic differences that might want to be explored.
 
Depends if you will want to go off resort and explore, or if you simply want a nice hotel with all the stuff (and beach) in one place to just relax in. If the later, location is less important and it's more about the hotel/resort. On that basis just pick somewhere in Spain/Portugal with a nice all inclusive resort and don't pick a hotel that would attract 18 year old Brits. Greek islands are a good shout as well. So many...just pick one. Don't book during school holidays or the price can be 3-4 times higher.
Go on the main holiday sites like jet2, on the beach, trivago, tui etc. Also check expedia and places where you can do the flights and hotel separate as can be cheaper. Package holidays are appealing for the family goers but if it is just yourself, much easier to sort out booking things separately to save cash.
