Spec me a new SSD

Hello, I've got a fairly old system now, running a Crosshair 6 Hero with my only drive being a 250GB SATA SSD from back in the day we were all looking at them and going "wow 250GB SSD, what a time to be alive" carried over from an even older build.

Now it looks like tech has moved on a lot, can someone please help spec me an upgrade? I'll probably keep the old drive connected but just use it for storage, I'm going to clone the OS and games onto the new one. Should I use the M.2 slot, has it completely superseded the SATA format? If so, which drives will fit? The Asus website seems to be covered in garish gaming graphics and I'm struggling to piece together the actual parameters for what to check for compatibility on my motherboard.

I've seen the WD Blue SN570 recommended but sadly that one doesn't seem for sale at the moment, should I wait for it or are there some decent alternatives? I nearly got an SA510 until I saw the specs were 5-10x lower speeds which seems like a big number so thought it best to check in as I'm definitely not au fait with things anymore
 
1tb but then 2tb are only 20 quid more so either of those should do me fine tbh. I've never had this much storage in my life, one in one out on steam was always the way to go...

The SA510 is SATA which is a waste of time, stick to NVMe. If you can't find an SN570 then the SN580 is the same (but better in later motherboards). The Lexar NM790 is also good. Damn, that's the third time I've plugged the NM790 this morning. I'll be looking like a Lexar fanrinkli......
