Should say that that was with one VGA/DVI output and the Svideo connected.
Also,to configure X, you want to define as little as possible. Metamodes and the like are fidgety to get working. I had terrible trouble, until I remembered how I config'd my first linux video card.......
#this option
#that option
#the other option.
Basically the more you ### out, ie, the less you specify, the more X will work out for itself, and X is THE smartest software I ever encountered.
Once you get it working in "do what you will" mode, you can get down to speccing res-pairs and refreshes and so on.
My brother is using both DVI outs on an 8800GTS to drive 2 monitors in Gentoo, with only one issue....he's doing a strecthed desktop, and the two screens are different res. Think he did work round it in the end.

xorg.conf can probably be posted in here if you need. I have my old one somewhere two, which was two identical indepentent desktops....one for using, and the other as nothing but a background for the TV until it was playing something. Loved it that way as it was like manual video mirroring.....you just specified DISPLAY=:0 to force something to the TV and DISPLAY=:1 for the monitor
