i agree on getting one good knife and one bread knife

All the way. One good cooks knife and cheap bread knives is it for me and has been for years. I have a knife block with some knives I bought 15 years ago on the worktop but they never get used.

Although I am thinking of getting a smaller utility knife for cheese and sandwich making.

Wow some of the knives on jack look absolutely fantastic and not to bad a price considering its in dollars. But what's good and what's not.

Be nice if that site was easier to search. Why do so many have different style handles in same range.

Would love to search for 50/50 bevel edge.

Hattori HD series looks amazing and 50/50 edge, handles look like my sort of grip, and very good Rockwell hardness, but small range of knifes. No big vegtable choper or clever.

Edit oh wait it does have a veg chopper.

Why on earth did you tell us this site I am so tempted to try the cheapest knife. As never be able to try one out in the shop. Only$7 shipping as well.

Like I said, the good knives are my wife's; she's a chef. - She likes the Hattori because it has good balance and no bolster (which allows a variety of different holds). I think this design also lets you cut Japanese style (with the arm), and European style (with the wrist). It also takes a mean edge and has a nice hamon.

If I remember correctly, there can be a bit of a wait to get the really nice Hattori stuff; although that could have been post-tsunami.
There's certainly a waiting list for the custom knives; the wife has been on it for a couple of years now, but when she gets to the top she'll get one made for the dimensions of her hand.

The ordering process was easy, and if they've got the knife made already it ships pretty quickly. - The biggest delay is in sorting out paying the customs duty so that it can be delivered.
 
Just started changing my knife collection, got a Robert Welch chef knife and find it very very good. Toss up between this and Global but think I will go for a RW set.
