The op wants a Linux server. I run multiple linux servers here, I think the biggest install (it has a full compile environment, as well as running xbmc and mythtv) is less than 5G.60GB won't get you very far though. Im using a 64Gb as a boot drive and its nearly full. The only things properly installed on there are Windows 7 and Office.

30G will probably be fine Even my mega-server running Free BSD where I run all central house apps and I've been experimenting with jails etc. is only using 12G...should have re-read.
60Gb is fine.
