For City Skylines, Football Manager and general browsing the basic TP Link should be fine.
Not the gigabyte b350 Gaming, no.
Bluetooth is cheap to add ~£10 and your TP Link is fine for your needs.

Anycase the graphics card (gtx 970) would have just sit there collecting dust, anyways i have saved the op about 100 quid... so yeah.
get pics posted when sorted, look forward seeing it
just take your time, do you have anymore fans etc for cooling etc
It will be a bit tricky but you will succeed anycase there will be people here on this forum to help you build your pc and also read the motherboard instructions.
that corsair Carbide 270r is a nice case too, room for rad at top or front or even 2 x 140mm fans at top for extra cooling

Have you got the lead from the monitor to the computer connected to the right output?
Double check you have it connected to the GPU and not the motherboard output.
Have you made sure your monitor is set to display form the correct HDMI?
Yes, but sometimes the monitor needs to be told that its using the HDMI slot - or the right HDMI input if it has more than one.
Check the panel settings and make sure HDMI is selected.
