I have a full jar of spice mix that has just passed it sell by date, so I want to use it in something. I love the taste of spice mix in cakes, but hate fruit cakes or any dense cakes.

What I want to know is can I just put some into a basic cake mix? In place of cocoa if I was going to turn it into a chocolate cake for instance? I'm sure I have had something similar in the past, but can't find any recipes that aren't fruit based.

Also if anyone has a tried and tested cake recipe that I could add it to and how much I should add, that would be awesome!

I guess that might work in a 5 minute sponge cake?

1 cup self-raising flour
1 teaspoon cornflour
1 cup caster sugar
3 tablespoons milk
2 tablespoons melted butter
3 medium eggs
1 teaspoon baking powder

Preheat oven to 190oC (180oC electric fan). Sift the flours together, then add the rest of the ingredients and beat on high with an electric mixer for 5 minutes (hence the name). Obviously longer by hand. Bake for roughly 20 mins or until cooked.

Not sure how much spice you'd add, maybe 2 tablespoons?

Not relay a spice cake, but does have a small amount in, however .

The one fruit cake to rule them all.
Cut and come again cake
I'm addicted to this cake.

The only change I make is about 8oz mixed fruit and 4oz of glacier cherries, I love glacier cherries.

Dusting the fruit in flour, will help prevent the fruit from sinking whilst it bakes.

Oops seems I missed out the milk when I put the recipe in. Enough milk to get dropping consistency. Which depends on flour and egg size but around 3 tablespoons and pinch of salt.
Dropping consistency is a technique of getting consistency required of cake mixes where the mixture isn't soft enough to fall easily off the spoon but slides off reluctantly after a few seconds.
