That's optional.
Ensure the BIOS is set to boot from the SSD first, and all should be well. My BIOS then went and asked me (again) which OS I wanted to load. Shouldn't be a problem to just delete the old windows from the HDD after you've booted from the SSD.
I have this same issue, i am considering getting an SSD. I have a Windows 7 Professonal (64bit) OEM copy install on my HDD. Actaully it was an upgrade disk from windows 7 basic. Would i be able to re-use this upgrade product code?

Yes, I believe it is 'tied' to the motherboard, so just changing a drive won't be a problem, assuming you have the key!
