Going to buy an SSD, but I (think) I'm fairly clueless how to install a fresh copy of windows 7 onto it and keep/move stuff from the HDD to it.

Do I remove my HDD, install my SSD and windows 7 and let it load up fully, turn it off and connect the HDD again, power on and literally click and move folders?

I heard there was drive modes, ACHI etc that the SSD needs to be set? I've no idea about this.

if you want to clone your current system on to your SSD follow this guide here, free software to do it and steps to follow

connect the ssd to a sata 3 (6gb) port and set the sata ports to achi in the bios, other options will be IDE or RAID

if you want to do a clean install disconnect all HDDs and just have the SSD connected and load the windows 7 install from either a usb stick or CD. once OS installed connect the HDD back up and then copy over anything you want but make sure that the SSD stays as the main boot device as it may revert to the HDD once connected
