A £5 eBay thermometer ain't a thermapen

A superfast thermapen is great for getting steak just right - but remember the core temp will rise a bit after cooking. Any other probe thermometer is going to take too long to give a decent reading

I always take mine out before it's hit the desired temp because when covered and resting it will rise due to being covered still and the surrounding temps.
 
Yeah Thermapen's are awesome, your cheapo ones will take an age to get up to temperature, insta-temp for the win :p

From what I've heard the thermapens are awesome but I've personally used the below item and it's both accurate (tested with ice cold and also boiling water) and *fairly* quick. Not as quick as a thermapen I imagine but it's fast enough for steaks, just about :) For the price and utility it's quite good.

ebay thermometer user here too - I can't say I use it much for steaks really, though. It's pretty fast to get to temperature, but not quite fast enough I don't think to be accurate for a cut of meat that requires accuracy. Like others have said, it carries on cooking and rising afterwards, and the 20 seconds it takes for the thermometer to actually level out could change everything (if we're getting a bit Heston here).

I did also buy a unit one with a heat proof cord from TK Max, that's more so for roasts and particularly beef wellington.
