I have a load of headphones kicking around from superlux to mid range senhiesers but I'm wondering whether it's worth an upgrade to a 5.1/7.1 set? Don't need to be thunderously loud as I already have ringing in my ears. Won't be watching films it's purely for games. Is it worth it?

you don;t need new phones if you already have good ones.
An Asus Xonar DG/DGX will cost very little and give you the same 5.1 simulated surround that gimmicky headsets do and if you want a mic a clip on mic doesn't cost the Earth either.
