stuffing recipe

Going to be cooking a Christmas dinner for a few friends this week, I know what I'm going to cook apart from the starter and the stuffing.

So has anyone got a good stuffing recipe which isn't overly herby like shop brought rubbish and can be cooked separately as balls.

Also any ideas for a starter?
