This is going back a good decade to my metal days, but what about the Paradise Lost back catalogue? Draconian times is prety epic and melodic stuff and considered a classic.

Doesn't mean I can't hate Maiden for being a bunch of whining, sackless poofs who couldn't write their way out of a paper bag. They're about as 'Metal' as Coldplay.

I was brought up listening to Late eighties/early nineties extreme metal, thirties, forties and fifties swing, blues and jazz, seventies rock and some damn good hiphop.

Awesome as they are, they're just thrash, really.
 
Not sure if this is what you are looking for but Apocalyptica are what I'd describe as symphonic.

"Hope" is a very powerful track IMO and should give you an idea what they are capable of. The original is purely orchestra, with "Hope Vol. 2" featuring vocals.

Carcass were, are and will always be one of the most essential metal bands the world has ever seen.
