Summer Beef recipe

I bought some stewing steak in M&S at the weekend and it needs to be cooked today.

I want to do something summery with it (not a heavy stew)

Any ideas?

Try Italian stuffed beef rolls?

Tenderise the beef steaks till it's about 1/4 inch thick (cling film and pan/meat hammer job), season and soak in red wine for 1-2 hours, or if you want it a bit zingy, a lemon juice and olive oil dressing.

Make some breadcrumbs, and finely dice some sage and onion. Saute onion and sage and add breadcrumbs with stock to make a rich stuffing. Mix in a bowl with Parmesan (and if you have them pine nuts) and shape into balls. distribute the stuffing over the steaks and roll them up into a ball shape, then tie them up with cooking string. Preheat a deep saucepan with oil and chuck in some chopped garlic and onion, saute until browned on mid heat and deglaze the pan with balsamic vinegar. Add your beef steak and fully brown. Chuck in 250ml of stock and bring to simmer, reduce to about a third, should take 10-15 minutes. Chuck in about 500ml of passata and season generously with salt and pepper. add fresh herbs, such as sage, parsley, or basil (or all 3) and add a generous splash of red wine. You can also add (to taste) sliced olives, sundried tomatoes and mushrooms. . bring to boil and cover, simmmer for 15 minutes. cook for a further 15 minutes, uncovered, until the sauce is nicely reduced and thick, and leave to cool for 5 minutes. Serve with plenty of crusty bread!
