Hi everyone.

I've loved the whole Sushi experience for years, so I thought it about time that I had a go myself.
I've seen some great starter kits that are available, and I've ordered a book for beginners which is getting delivered tomorrow.

The one thing that I am struggling with, is finding somewhere that sells fish of the right quality to use in Sushi/Sashimi.
Our town doesn't have a local fishmonger, and Asda and Tescos weren't much help. I've also emailed a few large online fish outlets only to be told that they don't supply it.

So I put the question out to the ocuk budding chefs.
Have any of you got pointers, or even better, experience in buying this grade of fish?
 
Sure there are a few online fish companies that do deliver, a few were mentioned on here a while ago.

Might be worth doing a search on here or waiting for someone with a better memory than me!
 
I did a search earlier and didn't find anything, but I've done another and found a threads.
Having a read through now and not a lot of luck.

Might try Waitrose.
 
Supermarkets wont be fresh enough. Your best bet is to find the fish delivery companies near you. I used to have a guy that came round with fresh fish (and it was fresh) when I lived in South Derbyshire, but I can't remember the name for the life of me.

To be honest, I'm not too savvy with sushi/sashimi. I seldom even eat it, let alone cook it (not that I have anything against it). What sort of fish are you specifically looking for? White sea fish?

Problem is, living the Midlands is always going to be a bit of a bugger, not many companies will drive to the coast and back for fish they aim to sell in one day, a lot of it will be frozen.

Youre only an hour or so away from the east coast, though, perhaps a drive to Boston or Skegness would actually be less hassle in the long run?

Try this place, http://fredhallam.com - looks like they get deliveries daily so if you give them a call and ask for something in advance (give them a day's notice) and you should be able to go over and pick your fish up after they've just had their delivery.

You could always start off with making veg (cucumber, pepper, carrot)/cooked tuna/smoked salmon/prawn sushi.

It's incredibly easy to make, and it might be worth using these easy fillings/toppings for your first batch anyhow, before forking out for really nice fish :)

I have tried sushi a couple of times and it has turned out ok.

Yesterday I went to a sushi class at Yo!Sushi where you get to roll your own as demonstrated by the staff;

After a bit of slicing I ended up with all this:

Which you get to eat or take home with you, I managed to eat half.

The price is £30 for 1 or £50 for 2 and considering you get all that sushi + a rolling mat it is quite good value and good fun. Once you've done a couple and they show you the correct amount of rice and how to roll it is fairly easy to do.
What seemed to make it easier than when I did it at home was we all used gloves and some kind of spray on lubricant that stopped the rice sticking to them. Prevented that problem of the rice sticking to EVERYTHING. They also give you cooked rice but explain how you would make it at home in a saucepan, and they give you a booklet with all the instructions for rice and rolling.

I would say it is slightly more 'fun' than educational.
