ATM I have my os ona RAID0 over two drives and I was wondering if I could take these out, put in a new RAID0 (over two disks) but then maybe at a later date go back to the original RAID0 with out losing any of the data?

The best answer I can give you is maybe.

In theory it should work in that the data will remain intact on the original 2 disks so hopefully the controller will redetect the original array if you replug it. However there is the usual caveat that I've not done it or heard of anyone who has so I can't say for sure that it'll work.
