Sweet Potatos

I often cut them into wedges, coat in olive oil with a little salt and pepper and roast. Only take a few minutes. Or just on their own, baked in the oven, with a tub of cottage cheese dumped on top.
 
Roasted or in a pie :)

Peel, cut into chunks, rinse under cold water, boil them for 8 minutes or so then put in a roasting tin with olive or ground nut oil/season and I like to put fresh rosemary and thyme over them.

40 minutes at 200oC fan but I tend to check after ½ hour (depends on size of chunks as well of course!)

They make great chips/wedges as well, little bit healthier.
 
Roast and mash, then add breadcrumbs, olive oil and goats cheese for the ultimate veggie burger. Plenty of salt and pepper too.
 
I had the same issue as TheBrooder because I had to compromise on the temp as I was cooking something else alongside.
