T - Bone Steak

Rightio,

I have just ordered 2 x 1" thick T bone steaks from here http://www.theblagdonfarmshop.co.uk/ which I've had rib eye/fillet/sirloin from and they have all been very nice.

Now my question to you is what should I have as a side, (please not cooking conditions have already been addressed before so no debate on blue - burnt)

I was thinking of doing mushrooms and shallots in some sort of jus but still not sure.

So OcUK help me decide.

Pics of steaks will come tomorrow once I have picked them up.

Baked potato and asparagus

you need nothing more :)

Normally I would agree but I have asparagus with fillet steak, wanted to try something different.

At the moment it is looking like Sauteed mushrooms with a cream sauce made from beef stock and thick cream.

And some very thick home made oven chips, but not too sure on the chips. Never been good at making really thick ones.

Really? I work in Seaton Burn. The steaks are really good the butchers there are helpful aswell if you want to talk to them about what you want.

Its quite a weird place as somethings are expensive but the steaks (I was quoted £17/kg for the T bone) seem very reasonable for freerange local produce.

Also they do the most amazing strawberry cheese cake according to my GF.

As a side not drenched like you see some places doing with pepper corn sauce.

I might get some propper english mustard aswell, never been a fan of beetroot.

i agree with Rotty no sauce mushrooms fried and drained for me with chips.

Of course if your steak is going to be cremated you might need sauce ;)

Steak will be rare or if I can manage it with the oven/griddle and this size of steak it will be blue :)

T-Bones can be a bit awkward to cook, as the meat contracts then come of it may not be in contact with the pan

I have a nice iron griddle so that won't be a problem.

Cooking method so far is this. Pre heat oven to 80-100C

1) Let steaks rest of the bench for 30-40 min (making sure the dogs are kept out of the kitchen)
2) Season with black pepper and sea salt and olive oil - leave to rest for the above length of time
3) Heat griddle to a medium/high heat and melt a small amount of butter
4) Cook each steak for around 1-2min on each side
5) remove and place in oven for around 7-8min
6) turn oven off and transfer steak to the plates (should have been in the oven with the steak)
7) let them rest in the oven for 5-10 min with the door open ajar
8) tidy kitchen so you don't have to do it while stuffed and sort out anything which is coming with the steak (chips/mushrooms/asparagus etc)
9) Eat :D

I'm not a very good cook, I like to cook as a hobby as I like to eat well, mainly steak tho.

Which isn't the hardest thing in the world, I just find it hard going out for a meal where I think I could cook this steak better, which is why I never order if from crap places/pubs.

Sauces and things I'm crap at and quite a few other things aswell, I can just cook a nice big steak to perfection for me :D

Stupid question, but is that 1kg steaks, at £17 for the two? or £17 each, lol I've only ever eaten a 20oz steak, nevermind a 35 oz, lol.

Also let me know how it is and I might divert to that place one day on the way home from work.

Not sure, its either 2 steaks at 500g each or 2 steaks at 1kg each, either way im going to have fun eating it :D think my GF will struggle with it tho.

If you want T Bone you will have to ring up in advance as they will need to cut them for you as they are not normally sold in stock, iirc they do their butchering on a thursday so its best to ring up today (on the morning) to get them for a friday but the rest of the stuff they do is top notch :D

so how much do the weigh then KaHn?

you make me want to go to Meetmeat.be tonight for dinner :D

Overall weight was 1.2kg so about 600g each, I was very tempted to ask him to cut them about twice as thick as he had half the cow infront of me.

I couldn't resist the black pudding hence the change to the side :D
