I've no useful advice here apart from everything in moderation. Going from 3 meat meals a day to nothing was always going to be difficult. Just keep trying new veggie recipes, maybe one or two a week and before you know it you'll have a wide range to choose from. It's not all curries with cauliflower. We replaced pretty much all of our stir fry recipes (well, the regulars were beef, broccoli and black bean - and pad thai) with tofu. Learn how to do it well (press, fry in seasoned cornflour first) and it's great. That's just one type of cuisine, you can do paneer curries, dals, obviously there's loads of indian options. Loads of veggie pasta or risotto dishes that are easy too. A nice mushroom risotto goes a long way in this cold weather.

I'm just more amazed that the OP had time to cook a breakfast in the morning every day, and also cook a roast every night! Are you retired? lol :p
