Tell me which is best out of these 3 (PC8500)

If you should pick 2GB or 4GB is not a question we can answer from what you have said.
but I'd rather go for the cheaper out the 3 if there isnt any difference in performance
Performance wise they are all the same but if you intend to use 4 sticks or 2 sticks I'd go with 2 sticks cos you get the option of upgrade in the future and put less stress on the memory controller/northbridge.

If you are not sure you need PC2-8500 look at PC2-6400. For many PC2-8500 is unnecessary.
 
I like the ocz but dont think I will get more than 2 sticks in my board because of those heatsinks,Am waiting for these to come back in stock

These are popular on other forums checkout the stats and good price too,I am running 2x1> 5 5 5 15> 8500 ballistics at the moment but have trouble running at its rated speed 1066 since lowering the latency 4 4 4 12 @800>2.1v its been fine ive given up clocking my ram its not worth the hassle for such a small performance gain:o

Is there any benifits in having 2X2GB over 4X1GB, other than strain on the Northbridge
The strain can hit your overclock but I'm not sure how recent P35/X38 boards are with that. P35 can handle 4 sticks at PC2-6400 but older chipsets couldn't handle it even at stock.
