Maybe because he gives them rubbish jobs to do? The whole 100k salary is a front for the tv series, the winner doesn't get to "work with Lord Sugar" at all. They are given a public relations role to promote a new office block or building or whatever else he is building as they have a "recognisable face" that makes good PR. They are not given any management role or any real responsibility.
